Lemon Zinger Quinoa Salad

Ingredients

Tea is not just for drinking – cook quinoa in tea for this delicious, healthful lunch.

1 cup (250 mL) quinoa, rinsed and drained
2 bags Celestial Seasonings® Lemon Zinger Tea
1 large or 2 small cooked beets, chopped
1/2 cup (125 mL) crumbled goat cheese
1 tsp (5 mL) finely chopped fresh chives

Lemon Zinger Dressing:

2 bags Celestial Seasonings® Lemon Zinger Tea
1/4 cup (60 mL) olive oil
2 tbsp (30 mL) white wine vinegar
1 tbsp (15 mL) finely chopped fresh chives
1/4 tsp (1 mL) each salt and pepper

Directions

  1. Bring 1 1/2 cups (375 mL) salted water to boil in saucepan; stir in quinoa and tea bags; return to boil.
  2. Reduce heat to low; cover and simmer for 12 to 15 minutes or until no liquid remains. 
  3. Remove tea bags and transfer quinoa to serving

    Lemon Zinger Dressing: 
  4. Meanwhile, steep Lemon Zinger tea bags in 1/2 cup (125 mL) boiling water for 5 minutes; remove tea bags.
  5. Whisk together tea, olive oil, vinegar, chives, salt and pepper.
  6. Toss quinoa with beets and dressing. 
  7. Sprinkle with goat cheese and chives before serving.
